Welcome to Cast Iron and Fire. I’m James and I like to cook food that everyone can enjoy. I live in Charlotte,NC and when I’m not coming up with new recipes, I also do freelance graphic design and visual effects.
My roots in cooking come steeped in the deep south. At a very young age I was introduced to southern food while playing around in my Grandma Jonnie’s kitchen while she cooked the best southern classics for the entire family. From fried chicken and collard greens to biscuits and gravy she cooked it all. I guess you can say I developed a taste for southern food early on. As a got older and moved around the country I started sampling many other types of food and fell in love with a few of them along the way. Whenever I discover a new taste in my travels, I do my best to try and recreate when I get home. While living in San Antonio,Texas I started experimenting with BBQ and smoking food. It is also where I found my love of southern Texas and Mexican food. Tex-Mex is one of the many tastes that I incorporate into my cooking as often as I can. There is just something about the flavors and the spices that I love. So, don’t be surprised if you see a few recipes of your favorite classics infused with a little South Texas flair.
When it comes to cooking, I love to use fresh ingredients and even grow some of my own (along with the help of my wonderful wife). However, if I can save you some time and still get you the great taste using something frozen or prepackaged, I will do it without hesitation. I don’t want you to have to spend hours tracking down and preparing ingredients for a meal when you are in a hurry.
One of the things my wife is always amazed with is my ability to “MacGyver up” something in the kitchen just by looking through the fridge,freezer and pantry to see what we have available. She thinks I’m at my best when I cook on the fly without a plan.
I like to make simple, great tasting food and I want to make it easy for you to do too.
